I woke up one morning last Fall with dreams of Pumpkin Cream Cheese Stuffed French Toast, which recently inspired me to make this Strawberry Cream Cheese Stuffed French Toast as a special Valentine’s Day treat.
I started with fresh strawberries and decided to make my own strawberry cream cheese instead of buying it.  I then cut the bread into heart shapes with a cookie cutter, which is totally unnecessary, but adorable.  After all, Valentine’s weekend is coming up, and what’s better than breakfast in bed?

1 Loaf of Whole Wheat Bread
-2 Large Eggs
-1/2 Cup of Milk
-1/2 teaspoon Vanilla

For the Strawberry Cream Cheese:
-1 Cup of Stawberries, chopped
-1/4 Cup Powdered Sugar
-4 Ounces of Cream Cheese, softened

Clean and remove stems from fresh strawberries.
Puree the strawberries in a blender until liquid.

If you’re feeling fancy, strain out the seeds.  I wasn’t feeling fancy- it was in the morning.  (Straining the seeds isn’t necessary, after all.)

Mix together the softened cream cheese and powdered sugar until creamy.

Add the strawberry puree to the cream cheese mixture.

Mix well.  Try a taste and make sure it’s sweet enough for you.  If not, add a little more powdered sugar.

Use a cookie cutter to cut heart shapes out of the bread, if desired.

In a separate bowl or deep dish, mix together eggs, milk, and vanilla.  Briefly dip each side of the bread in it.
In a nonstick skillet, fry each side of the French toast on medium heat until deep golden.
Keep warm in the oven while you make the other slices.

To assemble, spread the cream cheese mixture with a butter knife between two pieces of French toast.
Garnish with sliced strawberries and a sprinkling of powdered sugar.
