Last week, I picked up a package of granola from the grocery store and blew through it.  It was amazing for breakfast on top of some yogurt and I actually made it past 10am before I was reaching for a snack.  I’ve seen a few homemade granola recipes out there, but felt like it was probably not worth the effort.  I was wrong.  Very, very wrong.  Homemade granola is a billion times better than the packaged stuff!  Not to mention, a fraction of the cost.

-3 Cups Old Fashioned Oats
-1/4 Cup Coconut Oil (Vegetable oil is fine, too)
-1/2 Cup Chopped Pecans
-3/4 Cup Shredded Sweetened Coconut
-1/4 Cup Maple Syrup
-2 Tablespoons Honey
1/2 teaspoon Salt

Preheat oven to 250F.

Put all ingredients into a large bowl.
Mix well until combined.

Pour onto a baking sheet lined with parchment paper or a silicone baking mat.
Bake for one hour and 15 minutes, taking out and stirring around every 15 minutes until golden.

Allow to cool and package in an airtight container.  Will keep for about a week.
