What could be better than something coated in brown sugar, whiskey, and butter?  I don’t think such a thing exists.  I made these Whiskey Glazed Carrots for Thanksgiving and they were so delicious!  I plan on making these again for a special Christmas dinner.

I tweaked this recipe a bit from The Pioneer Woman.

-1 Stick Butter, divided
-3 lbs. Carrots, peeled and sliced
-1/2 Cup Maker’s Mark (or other whiskey)
-1/2 Cup Brown Sugar
-1/2 teaspoon Salt
-Freshly Ground Pepper, to taste
-Parsley or Chives, to garnish

Melt butter over high heat in a large skillet.  In batches, (being sure not to overcrowd the pan,) cook carrots to get some deep brown color on the outside, about 1 minute per side.  Remove carrots from skillet.  Reduce heat to medium.  Pour whiskey into the skillet (be careful with open flame, please!) and allow to cook down for a minute.  Add remaining butter and allow to melt.  Add brown sugar and stir to melt.  Next, add carrots, cover, and cook for 5 minutes.  Stir, add salt and pepper if desired, and allow to cook for another 5 minutes.  The glaze should be thick, and carrots should pierce with a fork.
