Craving a hearty breakfast and not feeling like grating potatoes, I decided to make the second best choice:  home fries.  I had never made them before and I must say this was an amazing first try!  They tasted spot on.

I liked the idea of microwaving the potatoes first because otherwise they’d take too long to make.  These potatoes have a great balance of tender in the center with the crispy outside every batch of home fries should have!

Ingredients:

-2 Cups Red Skin Potatoes – scrubbed well and diced
-1 Shallot – chopped fine
-1 Clove Garlic – minced
-1 Tablespoon Olive Oil
-1/2 teaspoon Salt
-1/4 teaspoon Black Pepper
-1/4 teaspoon Paprika
-1/4 teaspoon Chili Powder
-1/4 teaspoon Garlic Powder
-1/4 cup Chives, chopped (optional)

Toss potatoes with olive oil in a microwave safe bowl.

Cover with saran wrap and microwave 5-7 minutes.

Make sure they’re fork tender.

Heat up olive oil and spices on medium heat.

Add potatoes to olive oil/spices and let sit in pan before stirring for 5 minutes.

Let them get nice and crispy.  Resist the temptation to stir or flip the potatoes.

Let cook for another 5 minutes until the other sides are crispy.

Serve hot with (last night’s leftover) steak, and eggs.  Top with fresh chives from the garden.
