I have a hard time wanting chili in the summer.  I figured a white/turkey chili might get me in the chili mood.  It definitely is more suitable for summer than a traditional chili!  Plus, it’s easy and convenient to just toss it in the crock pot and have it waiting for you when you get home!  Can’t beat it!


-1 Onion, chopped
-4 Cloves Garlic, minced
-1 Pound Extra Lean Ground Turkey
-1 Can (4 oz.) Diced Green Chili Peppers (you can do 2 cans if you like it hot!)
-1 teaspoon Cumin
-1 teaspoon Chili Powder
-1 Tablespoon Olive Oil
-Sprinkle of Red Pepper Flakes, optional
-2 Cans Cannellini Beans or Great Northern Beans, drained
-1 Can Chicken Broth
-1 Can of White Corn, drained


-1/2 Cup Cheddar Cheese
-1/2 Cup Chopped Green Onions

Saute onions, garlic, and seasonings in a pan on medium heat. Cook until onions become translucent and fragrant.

Add ground turkey and brown.

Add beans, corn, green peppers, and chicken broth to the crock pot on low heat while turkey cooks.

Add browned turkey and cook on low for 6-8 hours, or at least 4 hours.

This is pre-finished product- the liquid should cook down and it will be deliciousy flavorful!  Somehow, I skipped the final product…maybe because I was too busy scarfing it down.  🙂
