Just back from vacation, I was feeling pretty lazy.  I grabbed a rotisserie chicken at the grocery store and decided to make dinner with it.  I roast my own chickens pretty frequently, but they were on sale and I couldn’t resist the convenience.  This is perfect for a quick, easy, and healthy weeknight meal!

Ingredients:

-2 Cooked Chicken Breasts, shredded or cubed (grilled, rotisserie, roasted, etc.)
-1 Green Pepper, chopped
-1 Jalepeno diced fine with seeds removed
-1/4 Onion, diced
-1 Clove Garlic, minced
-1 Tablespoon Olive Oil
-1-3 teaspoons Cumin, to taste
-1 14oz. Can of Black Beans, rinsed and drained
-1 Avocado, cubed
-Cheddar cheese, optional

Chop up your veggies- green peppers, onions, garlic and jalapeno.

Saute vegetables in olive oil until they just begin to soften.

Add drained and rinsed black beans, along with cooked chicken.

Stir around until heated through.

Heat up your tortilla in another pan or microwave for 10-20 seconds.

Fill the tortilla with veggie, bean and chicken mixture.  Top with cheese and avocado cubes.

Serve hot!
