For whatever reason I had a craving for kale. Its dark green, chewy leafy texture sounded so good. I wanted it in soup, something easy. I defrosted some homemade chicken broth and got to work. A high quality chicken sausage paired perfectly with it, and orzo gives it a fancier taste and feel. Rice works too, but I only wanted to be so healthy, alright?
-4 Cups Chicken Broth
-1 Cup Kale, rinsed and chopped
-1 Cup Orzo, cooked and drained
-2 Chicken Sausages, pre cooked
Homemade chicken broth is always the best, but if not available then purchase a high quality, low sodium broth. I thawed mine out and it had pieces of chicken breast still in it- which was a nice addition. You can also throw in any other chopped veggies you have on hand- snap peas, carrots, etc.
Serve hot and sprinkle grated parmesan cheese on top, if desired.
