We finally have a break here in the hot weather in Ohio, but I’m still craving summery dishes.  Lord knows I love potatoes, but the usual hot baked potato wasn’t sounding so great tonight.  Instead, I threw together a different type of potato dish.  With (low fat) sour cream and fresh lime juice, this potato recipe is a refreshing change.


-1 lb. Mini Gold Potatoes, or Gold Potatoes cut in smaller pieces
-1/2 Cup Low Fat Sour Cream
-Juice of 1 Lime
-Salt and Pepper to Taste
-Parsley for Garnish, Optional

Boil potatoes until fork tender, about 15 minutes.

Remove from heat and drain.

Mix sour cream and fresh squeezed lime juice.  Add salt and pepper, if desired.

Mix well with a spoon.

Gently stir the potatoes in with the sour cream mixture until coated.

Garnish with parsley if you have some on hand.  Serve hot as a side dish!

Super easy potato dish ready in 20 minutes or less with minimal effort.  I promise you the sour cream and lime combo isn’t as weird as it sounds- give it a try!
