Please forgive me for the multiple oven baked potato recipes lately.  The thing is, they’re just so darn good.  And when I have a good thing going, I’m not about to hold out on you all.

I served these up with the Rosemary Garlic Pork Tenderloin and they went with it perfectly.

Ingredients:

-2 lbs. redskin potatoes

-1 Tablespoon olive oil

-1 sprig fresh rosemary

-1 clove minced garlic

-1 tsp. salt

-1/2 tsp. pepper

Preheat oven to 400F.  Wash and scrub potatoes well.

Quarter potatoes.

Place in a gallon ziploc bag with olive oil, rosemary, garlic, salt and pepper.  Shake well.

Pour out onto a baking sheet.

Bake for 10 minutes, remove and stir.  Bake another 10 minutes until crispy.

See?  Crispy.

Serve with an entree.  These have just the right amount of flavor and crispiness.  Not to mention they’re super easy to make.  They will take about 25 minutes total.
