You’ve trusted me this far, right?  So if I’m telling you something is the best, you better believe it’s the best.  These buckeyes are better than any other buckeyes, and I’ll go ahead and claim that they’re better than Reese’s peanut butter cups.  That’s a big claim!  Don’t believe me?  Make them.

(Yes, I’m demanding today.)

These are also super easy to make, but not as easy to make look pretty due to the dipping factor.  When they taste this good, who cares what they look like!

The Best Buckeyes

Ingredients:

-1/4 cup (2 ounces) cream cheese
-1 1/2 cups peanut butter (smooth)
-1 cup graham cracker crumbs (from about 14 graham crackers)
-1/4 tsp. salt
-3 cups confectioners’ (powdered) sugar
-10 tablespoons (1 1/4 sticks or 5 ounces) unsalted melted butter

-12 ounces chocolate

Combine peanut butter and cream cheese.

(I could eat this by itself, is that disgusting?)

Next, add graham cracker crumbs, salt, powdered sugar, and butter.

(You should eat this by itself, it’s amazing.)

Use hands to roll into buckeye sized balls, or if you’re not an Ohio native think the size of a small ping-pong ball.  You could also use a cookie dough scoop if you have one on hand.

Heat the chocolate up in a double boiler or in the microwave (in 15 second intervals, mixing in between) until chocolate is melted.

Dip the peanut butter balls into the chocolate use a toothpick or skewer.  I found it best to try to cover up where the hole was with chocolate for a better presentation.

Place on parchment paper and chill in the fridge for at least 30 minutes.

These will keep for up to a week in the fridge, if they make it that long…
